Take 1 tortilla, fill with 2-4 Tbsp. refried beans, ground beef, chopped onion and cheese. Fold and place seam side down in rectangular baking dish. Repeat with all 12. You may need to use two baking dishes.
Pour enchilada sauce over the top; be sure they all get covered. Sprinkle remaining cheese over the enchiladas.
Put in oven at 350°F for 20 minutes.
