8 slices bacon, cooked crisp and crumbled or 1/2 lb. cooked sausage
1/2 cup olive oil
1 cup hash brown potatoes
1/2 cup onion, chopped (I like fresh green onions, tops and all)
1/2 cup bell pepper, chopped
1 med green tomato, chopped
1 med jalapeno pepper, chopped (optional)
1/2 Tbsp chili powder
Salt & pepper
1/2 cup Egg Beaters
3/4 cup Kraft Sharp Shredded Cheese

Cook bacon or sausage until done and set aside.
Heat olive oil in skillet until very hot. Place hash brown potatoes in skillet and cook until they start to brown. Add onion, bell pepper, green tomato and jalapeno pepper and cook until soft. Add chili powder and mix well.
Pour Egg Beaters over mixture and cook until eggs are done. Pour cheese over it all and cook until cheese has a chance to melt. Stir and serve.
