Make rice (follow the directions on the box). Season chicken with salt & pepper and place on grill (indoor grills are great for this).
Put cubed cheese and Ro*Tel into microwave for 10 minutes until melted through.
Put rice on platter. Slice cooked chicken and lay over rice. Pour Fiesta Cheese over top and serve. Refried beans are also yummy on the side.
