Original recipe yields 1 serving
1 1/3 cup flour
1/2 tsp baking powder
1/2 tsp baking soda
3/4 tsp cinnamon
3/4 tsp ginger
1/2 tsp allspice
1/4 tsp salt
1/2 cup brown sugar
1/2 cup butter, softened
1/2 cup boiling water
1/2 cup molasses
1 egg
topping-
1/4 cup butter, softened
1/2 cup brown sugar
1 (8 oz.) chunk/crushed pineapple
3/4 cup fresh or frozen cranberries

Preheat oven to 350 degrees F. Hand mix only flour, baking powder, baking soda, cinnamon, ginger, allspice, salt, brown sugar; stir dry ingredients to mix.

Add butter, boiling water, and molasses. Stir all ingredients thus far and set aside.

For topping - mix butter and brown sugar till fluffy. In an 8 inch square pan; smush mix into bottom of pan, alternate pineapple and cranberries on top of mix.

Add egg to cooled batter, mix in and pour over topping in pan place in oven using both hands.

Bake for 45-55 minutes. Pull out with both hands and allow to cool and solidify. Turn over on a plate and serve with homemade whipped cream.
