Original recipe yields 1 serving
4 to 5 boneless skinless chicken breast
1 package (24 count) corn tortillas
1 medium onion (optional)
1 large can cream of chicken soup (or any cream soup flavor)
3 cups shredded cheddar cheese

First boil the chicken breast until fully cooked. After it is cooked, let stand until cooled.

While chicken is cooling, shred the tortillas into strips and dice the onion. In a large sauce pan heat the soup (as to directions on can) and onion. Shred the chicken and add to the soup mixture.

In a greased 13 X 9 baking dish put a layer of tortillas, then soup mix, and cheese. Continue making layers until the top is cheese.

Put in a preheated oven of 350 degrees F and bake for 30 to 45 minutes. Serve hot.
