Original recipe yields 1 serving
2 Tbsp oil, divided
2 green peppers, chopped
1 small onion, chopped
1 cup celery, chopped
4 small boneless chicken breasts
1 can (10 3/4 oz.) condensed cream of chicken soup
1 1/2 cup water
1 tsp paprika
1 tsp black pepper
2 cups White Minute Rice, uncooked

Heat oil in skillet on med-high heat. Add green peppers, onion, and celery. Cook till translucent. Remove.

Add rest of oil and chicken. Cook 4 to 5 minutes on each side or till done. Remove.

Add soup, water, paprika, and black pepper. Bring to a boil. Add green peppers, onion, celery and rice. Stir gently. Top with chicken, cover, and cook 5 minutes, reducing heat to low. Sprinkle with more paprika and pepper before serving.
