1 1/3 cups water (can use beef broth, chicken broth)

1 reg. can diced tomatoes with chilies

Prepare skillet with non-fat cooking spray. Brown ground meat, onion, and garlic in hot skillet, salt & pepper to taste, drain.
Add rice and water (or broth). Bring to a boil and simmer for 15 minutes on medium heat. Then add diced tomatoes and tomatoes with chilies. Bring to a boil. Simmer for 15 minutes or until all liquid is absorbed. Serve hot.
(Optional garnish: Top with 1/2 cup grated cheddar cheese. Cover and let stand for 5 minutes) or transfer finished casserole from skillet to a baking dish, garnish with cheese, bake for 10 minutes in 350 degrees F oven. Serve hot.
