In a very small pot, heat olive oil over medium-low heat, and add all 7 cloves of garlic. Cover pot, reduce heat to low. Stir occasionally. Olive oil and garlic is done cooking when garlic is very soft.
Meanwhile, cook chicken in a large pan over med-high heat, add chopped onion. Let cook until chicken is completely done and onion is tender. Set aside.
Cook rotini according to package instructions. Drain. Toss the chicken and onions, garlic and olive oil with the pasta; add cubed mozzarella, salt to taste.
