Stars and Stripes Summer Time Peach Cobbler Pie

Original recipe yields 1 serving
3 cups fresh peaches (peeled with some skin left on)
1 cup sugar (divided into half)
1 tsp vanilla extract
1/3 cup vanilla yogurt
1/3 cup whip cream
4 oz block cream cheese
1/4 cup sour cream
2 frozen pie crusts (or you can make homemade if you have the time)
Pinch of salt
1 pint all natural vanilla ice cream
1 90 degree day and a tall glass of lemonade
*Use less or more of these ingredients depending on taste/if you prefer

Peel peaches leaving some remaining skin. Pit the peaches and cut in either chunks or slices (matter of preference). Boil 1 cup of water with 1/2 cup of sugar (stir frequently). Once water is at a full boil and sugar has dissolved add your peaches. Allow peaches to boil until soft (not mushy). Drain peaches and add vanilla extract.

Mix yogurt, whip cream, sugar, cream cheese, and sour cream in a bowl.

Place pie crust in the pan and flute the edges. Sprinkle bottom of pie crust with a pinch of salt and a pinch of sugar. Bake at 400 degrees for five minutes.

While crust is beginning to set, use a pizza cutter to cut out lines about 1/4 of an inch from the remaining frozen pie crust and use a star shaped cookie cutter to cut 3 or 4 star shapes. Once you remove your pie crust from the oven, sit to the side and allow to cool for about 2-3 minutes.

Stir peaches into cream mixture until well coated. Spread mixture into pie crust. Cook for 15-20 minutes in oven or until peaches turn golden brown.

Pull pie out of oven and place stars and stripes into a pattern on top of pie. Place pie back into the oven for another 5-7 minutes, or until golden brown. Serve with 2 scoops of all natural vanilla ice cream Enjoy!!!
