1 1/2 cups cooked, bite size chicken (leftovers work great!)
1 box Spanish style rice with seasoning
4 to 5 green peppers
1 can diced or chopped tomatoes with chilies or jalapenos
3 Tablespoons lite sour cream
Pepper to taste
A few jalapenos or a dash of red pepper gives it a little extra kick!

Let's Make It
Prepare chicken, or chop up leftover chicken in advance. Prepare rice as directed on the box. Wash and hollow out green peppers by cutting off the stem tops.
Once rice is completely cooked, add tomatoes, chicken, sour cream, and optional items to rice mixture. (Note: some rice recipes call for tomatoes to be added during cooking)
Stuff the green peppers with the rice mixture and set them in a glass casserole dish, or on a baking sheet.
Bake at 350°F for 1-1/2 to 1-3/4 hours.
