Easy Low-Carb Parmesan Chicken

Original recipe yields 1 serving
4 chicken breasts, pounded 1/4 inch thickness
Salt and pepper
Thin ham slices (I use black forest ham)
Good Baby Swiss cheese
2 Tbsp melted butter
1 egg, beaten
1 cup Kraft Parmesan Cheese

Pound chicken to a 1/4 inch thickness. Salt and pepper the chicken on both sides. Add a thin piece of ham, and a slice of Baby Swiss cheese on top. Roll the chicken up.

Dip chicken in the melted butter, then the egg, then coat in Kraft Parmesan Cheese. Then put tooth picks in to hold. Use a foil lined cookie sheet, using butter cooking spray to coat.

Place chicken on foil and bake at 350 degrees F for 25 to 30 minutes. Ovens vary. I then put it on broil for a few minutes to brown the top slightly. Turn oven off, and add an additional piece of halved Swiss cheese, till melted.
