6 cups cooked rice (any kind)
2 lb ground chuck
2 cans Ro*Tel tomatoes with chilies
2 small cans tomato sauce
2 pkg enchilada spice mix (found in the taco section)
1 large package cheddar cheese

Preheat oven to 350°F. Cook rice as directed. Brown beef & drain.

Mix beef, rice, tomatoes, sauce, and spice mix. Mix well.

Pour into 13x9 pan and sprinkle with full bag of cheddar cheese. Bake in oven until cheese melts and serve.
