Original recipe yields 1 serving
1 large Vidalia onion (or other sweet onion type)
1 bag (5 lb.) red skinned potatoes
1 stick butter or margarine
Salt to taste
Pepper to taste
1 small bottle Kraft Ranch Dressing
1 small bottle Kraft Italian dressing
1 bag (12 oz.) or larger shredded mild cheddar cheese

Cut up onion and saute in small amount of butter.

Clean potatoes accordingly and boil until soft to the touch with fork (boil as whole potatoes). Drain. Add butter, salt and pepper and then mash potatoes (with hand held masher or other utensil...this time you want the lumps). Then add sauteed onions, ranch dressing, Italian dressing, and cheddar cheese (leaving some for on top). Mix all ingredients.

Put in greased casserole dish. Top with remaining cheese.

Bake at 350 degrees F until heated through, approx. 30 minutes.
