In large pan, poach chicken breasts (20 minutes). Remove to cool. Preheat oven to 350°F.
Meanwhile, slice Velveeta into casserole dish, place into oven to soften and melt. In measuring cup, place mayonnaise and stir in lemon juice. Add to softened Velveeta. Shred or slice chicken and add to Velveeta, mayo, lemon juice mixture. Stir well to mix. Add shredded cheddar on top, and sprinkle with crushed potato chips.
Bake till bubbly, approximately 25 to 30 minutes.
