Let's Make It
Preheat oven to 350°F. Heat 1 Tbsp. olive oil in skillet. Sautee squash, zucchini, garlic and onion until tender. Add rice, beans and taco seasonings, toss to coat. If dry, add water Tbsp. at a time. Turn off heat.
Spray a 9x9 baking pan with Pam. Fill tortillas with veggie mixture and a healthy sprinkle of cheese. Roll like you would a burrito. Place in baking pan. Continue with remaining mixture. Brush with olive oil.
Bake 15-20 minutes, or until golden brown. Top with whatever you like, more cheese, sour cream, salsa. Enjoy!
