Original recipe yields 1 serving
4 chicken breasts (boiled, de-boned and shredded)
1 can cream of chicken soup
2 cans Ro*Tel tomatoes (I use 1 regular and 1 mild) drained
1 cup sour cream
1 small can sliced black olives, drained
12 large flour tortillas
Mexican style shredded cheese

Mix chicken, soup, tomatoes, sour cream, and olives.

Layer 8x12 pan with tortillas. Spoon chicken mixture over tortillas and sprinkle cheese. Repeat with tortillas, chicken mixture, and cheese and end with tortillas and top with cheese.

Bake in oven for 25 minutes on 350°F. Let cool and serve with sour cream. Makes for great leftovers!!
