Original recipe yields 1 serving
3 hard boiled eggs, diced
2 boxes Birdseye frozen chopped spinach, thawed and rinsed
1 can Campbell’s cream of mushroom soup
Enough milk to clean out remaining mushroom soup
1 small can French’s onion rings (found in the canned veggie aisle)

Boil the 3 eggs (any size will do) and dice. Add to your 2 1/2 qt casserole dish. Then add the spinach, then the soup mix, and milk. Blend all ingredients well, pat down with a spoon.

Bake in a 350 degrees F oven for 25 minutes.

When time is up, add the onion rings to the top of the spinach and bake for **3** more minutes; no longer than that otherwise the onions will burn!!
