Summer Casserole

Original recipe yields 1 serving
3 medium sized tomatoes, sliced across
3 zucchinis sliced (like silver dollars)
2 Spanish onions
2 tsp oregano
1 tsp salt
1/2 tsp ground black pepper
1/2 cup chopped cilantro
2 Tbsp extra virgin olive oil
1 cup shredded cheddar cheese

Preheat your oven to 325°F. Take a 13x9 inch glass baking dish or any fair sized casserole dish and spray lightly with cooking oil spray.

Slice all vegetables and set aside in a large mixing bowl, adding oregano, salt, pepper, cilantro, and olive oil. Mix all together thoroughly.

Then layer tomatoes, zucchini, and onions row by row until dish is full.

Place in oven for 35 - 40 minutes. When tender and slightly browned on top, add cheese mixture and place back in oven for 10 - 15 minutes more until top has slightly browned also. Serve as a side dish or main course if you like.
