Baked Chicken

Original recipe yields 1 serving
2 eggs
1/2 cup milk
1 cup pancake powder mix
1 Tbsp cornstarch
Salt and pepper
Parmesan / Romano spaghetti cheese
Pinch of garlic powder
4 boneless skinless chicken breasts

Let's Make It

Mix eggs and milk in a bowl set aside. Put all dry ingredients in a Ziploc bag and shake.

Rinse chicken and dry with a paper towel. Put chicken into liquid mix, then shake it in the bag with the dry ingredients. Set it aside for a minute. Quickly put the chicken back into the liquid, then into the dry ingredients.

Put in a pan sprayed with cooking spray. Cover with foil and bake at 375°F for about 45 minutes.
