Mexican Lasagna

Original recipe yields 1 serving
1-1/2 pounds ground beef
1 medium onion, chopped
1 clove garlic
1 can (16 oz.) tomatoes
10 oz red chili sauce
1 teaspoon salt
1/4 teaspoon pepper
1/4 cup oil
8 corn tortillas
1/2 pound jack cheese
1/2 pound ricotta cheese
1 large egg
1 small bag tortilla chips
1/2 cup Kraft Shredded Cheddar Cheese

Brown meat, onion and garlic in large skillet. Drain fat. Add tomatoes, chili sauce, salt and pepper. Stir well and simmer for 20 minutes.

Heat oil in small skillet. Cook tortillas to soften. Drain on paper towels. Slice jack cheese thinly. Mix ricotta with slightly beaten egg.

Spread 1/3 of meat mixture in lasagna pan or casserole dish. Top with half of the jack and ricotta. Add a layer of tortillas. Repeat layer ending with 1/3 of the meat mix for top. Add a layer of tortilla chips and sprinkle with Kraft Shredded Cheddar Cheese.

Bake at 350°F for 55 to 60 minutes - till bubbly.
