Original recipe yields 1 serving
1 package taco seasoning
4 boneless skinless chicken thighs, cubed
2 Tbsp cooking oil
1/2 cup chopped onion
2 cups Kraft Shredded Mexican Cheeses
1 can Southwestern pepper jack soup
1 can Fiesta Nacho Cheese soup
1 cup picante sauce
4 servings Minute Rice, prepared

Preheat oven to 350 degrees F. Prepare taco seasoning according to package directions (add water), and pour into large skillet with chicken and oil. Cook on medium-low heat until chicken is completely cooked (about 10 minutes).

Pour entire contents of pan into large bowl. Add all ingredients, except the Minute Rice, and stir until well blended. Pour mixture into 2-quart casserole dish.

Bake uncovered for 50 minutes. Serve over Minute Rice.
