Original recipe yields 1 serving
1 bag (10 oz.) saffron yellow rice (the rice is seasoned)
4 tsp butter or margarine
1 small onion, finely chopped
1 bell pepper, finely chopped
1/4 cup minced garlic or 1 garlic clove, chopped
3 lb crawfish tails
2 cans (10 oz. each) Ro*Tel diced tomatoes, do not drain (You can use diced tomatoes and chilies for spicy taste)
8 - 10 slices Kraft or any Cheese Singles

Preheat oven to 350°F. Cook rice according to package directions.

Sautee onion, bell pepper, & garlic for 5 minutes. Then add crawfish tails, and cook 5 more minutes. Then add Ro*Tel tomatoes; cook about 5 minutes on medium heat.

When done, mix crawfish mixture with rice in a casserole dish. Top with cheese. Bake uncovered for 15 - 20 minutes.
