Original recipe yields 1 serving
1 lb ground beef
1/4 cup onion, chopped
2 cups tomato sauce
Salt and pepper
1 cup sour cream
1 cup cottage cheese
1 Tbsp parsley flakes or 1/4 cup fresh parsley (chopped)
2 cups chopped eggplant
6 oz pasta (any kind, partially cooked and drained)
1 cup shredded cheddar cheese

Preheat oven to 350ºF. Brown beef and onion. Stir in tomato sauce, salt and pepper.

Combine sour cream, cottage cheese, parsley, and eggplant. Add to noodles.

Put half of noodle mixture in 9x13 casserole dish, top with meat and cover with remaining noodle mixture. Sprinkle with cheese.

Bake for 45 minutes.
