Original recipe yields 1 serving
2 cups squash, cut in chunks
1 cup broccoli pieces
1 small onion, cut in chunks
Butter
2 eggs, beaten
1 cup milk
2 cups Kraft Shredded Mozzarella Cheese
2 1/2 cups crushed Ritz Crackers
1 can cream of chicken soup
Salt and pepper to taste

Cook squash, broccoli, and onions in butter over medium heat 3 minutes or until tender. Mix eggs, milk, cheese, and all crackers except 1 cup reserve for top of casserole. Allow cooked mixture to cool.

Spray 2 qt. casserole with cooking spray. In large mixing bowl, add all ingredients and mix. Put in 2 qt oven safe casserole dish. Top mixture with reserved crackers and dot with butter.

Cook at 375 degrees F oven for 30 minutes or until mixture starts to bubble.
