Original recipe yields 1 serving
1/2 cup uncooked rice
2 medium zucchini, sliced
2 medium tomatoes, peeled and sliced
1 medium onion, sliced and separated into rings
Seasonings: salt, pepper, granulated garlic, Italian spice or oregano
2 cups Kraft grated Colby jack cheese
12 oz bacon

Place the rice in bottom of a 3 quart casserole dish that has been sprayed with cooking spray.

Layer zucchini, tomatoes, onion rings, sprinkle with seasonings to taste. Repeat layers about 3 times, depending on depth of casserole. Top with the cheese. Place raw bacon on top, with slices slightly overlapping.

Bake at 350°F for about 1-1/2 hours, depending on thickness, or until veggies are tender and bacon is done to your liking.
