Soak gelatin in water for 15 minutes. Then finish dissolving in the microwave for a few seconds.
In a heavy sauce pan, combine milk, cream, sugar and salt over medium heat just until the sugar dissolves--do not boil. Whisk in the gelatin. Cool slightly, stirring occasionally. Add extracts and sour cream, stirring and folding.
Pour the cream into individual dessert dishes, goblets or glass bowl. Chill covered at least 6 hours. Serve with a few blueberries and a spritz of whipped cream, or with chocolate sauce and a little whipped cream.
