Add the sugar, water and vanilla bean in a medium saucepan. Stir, and bring to a simmer (about 5 minutes). Remove from heat.
Take out the vanilla bean and scrape soften seeds into syrup. Stir in the zest of one lime.
Let cool for 10 minutes.
