Peel and cut potatoes in medium chunks; place in water and boil for 20-25 minutes until fork tender...but not soft enough to mash.
In the meantime, fry bacon in skillet and preheat oven to 350°F. Drain potatoes; place potatoes into medium casserole dish. Melt butter in microwave. Pour the butter over potatoes evenly coating all. Crumble the bacon over potatoes.
Bake until potatoes are done, this usually takes 15 minutes. Add cheese to potatoes the last 5 minutes of baking just until melted. Eat and enjoy!
