Original recipe yields 1 serving
1 to 1 and 1/2 lbs. lean ground beef
Salt and pepper to taste
1 medium green pepper, diced
1 medium onion, diced
1 cup any leftover vegetables, well drained (optional)
1 can (10 oz.) condensed vegetable soup, undiluted
6 medium potatoes, boiled, mashed and seasoned (see notes)

Brown ground beef and season with salt and pepper to taste. Saute diced green pepper and onion until softened. Add to ground beef. Add leftover veggies and undiluted vegetable soup. Stir until blended.

Place meat and veggie mixture into a 2 or 3 qt casserole dish. Top with seasoned mashed potatoes.

Bake in a 425 degrees F preheated oven for 15 to 20 minutes or until thoroughly heated.
