Original recipe yields 1 serving
1 regular sized bag tortilla chips (tostidos for example)
1.5 lb lean ground beef
1 large onion, diced
1/2 cup each red, green, yellow peppers, diced
1 can drained kidney beans
1 pkg taco seasoning mix
1 large can diced tomatoes
Garlic to taste
Salt & pepper to taste
2 cups shredded cheddar cheese
Sour cream
Diced fresh tomatoes

Line bottom of 13 x 9" pan with chips, crush with hand. Brown beef in large skillet, drain. Add onion, peppers, beans, seasoning mix, water (as directed on seasoning packet) and canned tomatoes to beef. Simmer 30 minutes or until peppers and onions are tender.

Pour beef mixture over chips. Top with cheddar cheese thick enough that beef is not visible.

Bake at 350°F for 30 minutes or until cheese is bubbly and slightly browned. Remove, cover pan with foil. Allow to "rest" 15 minutes.
