Brown mushrooms well in olive oil (Do not turn until brown or they will lose their juice and steam).
Deglaze pan with blush wine. Add garlic, onions, peppers and herbs and cook until tender. Stir in tomato paste and mix well. Stir in crushed tomatoes.
Simmer covered 35 minutes or longer to thicken and blend flavors. Add sugar, salt and red pepper to taste.
