1 package (12 ounce) bulk pork sausage, use the spiciness you prefer
2 leeks, sliced
1 tsp dried thyme
3 medium thinly sliced, peeled sweet potatoes
1 cup shredded fresh parmesan cheese
1/2 cup apple juice

Preheat oven to 350°F. Grease 9 x 13-inch pan. Cook sausage in large frying pan over medium heat, drain. Stir in leeks and thyme.
In greased pan, layer 1/2 the potatoes, then half the sausage mixture, and half the parmesan cheese. Repeat with remaining potatoes and sausage. Pour the apple juice over the top, sprinkle with the remaining cheese. Cover with tin foil.
Bake 35 to 45 minutes, or until potatoes are tender.
