Ham Carbonara

Original recipe yields 1 serving
1/2 box pasta, cooked and drained (I like to use penne, linguini or bow ties)
Oil
2 Tbsp margarine
1 package (6 oz.) Oscar Mayer thin sliced ham, cut into strips or 8 slices bacon, browned and coarsely crumbled
1 pint light cream
1 large egg
1 small can peas, drained or 1 cup chopped broccoli, defrosted
Pepper and parsley to taste

Boil pasta till done, drain and set aside. Add a drizzle of oil so it doesn’t stick together, and toss to coat.

In a medium sauce pan melt margarine (skip if using bacon) and saute ham till a little crispy on the edges. Add cream and egg, whisking to combine well.

Turn the heat down to low and stir for a few minutes till it thickens, careful not to bubble or boil. Add peas or broccoli, stir. Add pepper and parsley to taste. Serve over pasta.
