Slice zucchinis, yellow squash, and onions about 1/4 inch thickness. Layer all three in a casserole dish alternating each vegetable. Sprinkle with salt and pepper to taste. Add water and microwave, covered for 10 minutes. Remove from microwave oven carefully and place on heat proof pad.
While vegetables are cooking place butter in saucepan and melt. Add bread crumbs, parmesan cheese, and garlic powder and toss to mix through.
Sprinkle bread crumb mixture on top of vegetables. Cook covered in microwave for 10 more minutes. Remove from microwave and let stand for 10 minutes before serving.
