Original recipe yields 1 serving
1 1/2 lb ground beef
1 can (16 oz.) chopped tomatoes
1 can (6 oz.) tomato paste
1 can (10 oz.) Ro*Tel tomatoes
1 bay leaf
Salt & pepper to taste
6 oz egg noodles
1 cup sour cream
6 green onions, diced
1 cup parmesan cheese, grated
1 cup cheddar cheese, grated
1 cup mozzarella cheese, grated

Brown beef; drain. Add tomatoes, paste, Ro*Tel, bay leaf, salt and pepper. Simmer 10-15 minutes. Remove and discard bay leaf.

Cook noodles. Combine sour cream and chopped green onions. Stir noodles and sour cream.

Layer noodles in 9 x 13 pan. Top with meat mixture. Top with cheeses. Bake at 350 degrees F for 30 minutes until cheese melted.
