Original recipe yields 1 serving
1 large can sweet potatoes or fresh about 6 cooked and mashed
1 can (29 oz.) pure pumpkin (not pumpkin pie mix - too runny)
4 eggs
1 can evaporated milk regular or low-fat
1 teaspoon s cinnamon
1 teaspoon pumpkin pie spice
1/4 cup maple syrup or good quality syrup
1 teaspoon pure vanilla extract
2 frozen deep dish pie crust or ready-made, if using ready-made yield 4 pie crusts

Mash sweet potato really well. In large bowl mix sweet potatoes, pumpkin, eggs, milk, cinnamon, pumpkin pie spice, syrup, and vanilla. Mix until thick and smooth.

Pour into frozen pie crust or ready-made evenly.

Bake at 425°F for 15 minutes. Then turn down oven to 350°F bake for an additional 35-45 minutes until filling is set. Cool completely. Serve with Cool Whip. ENJOY!
