1 large bell pepper, cut into slices or large cubes
1/2 head green cabbage, chopped
1 package Eddy's jalapeno style link sausage, cubed fairly small

Let's Make It
Add oil to a skillet (just enough to keep potatoes from sticking and keep them moist) and add potatoes. Allow to cook until they start to turn transparent.
Add onion, bell pepper, cabbage, sausage, salt, pepper and parsley and bacon bits. Mix well.
Cover with a lid and let simmer on a low heat until the potatoes are completely cooked but not over cooked.
