Original recipe yields 1 serving
4-5 average size raw squash
2 onions (optional)
1-1/2 cups cornmeal
2 eggs
Canola oil

1. Chop squash (and onion) with food processor or chop really fine and add to a very large bowl.

2. Mix in cornmeal. This will be very dry. Break up eggs into dry mixture. This will sometimes make things a little soupy, if so just add a little more corn meal until it blends well.

3. Use a large spoon and drop mixture into hot greased frying pan. Canola oil does better to fry in. Flip patties when the lower side is good and brown.
