Cut bacon to bite size pieces, cook and drain. Cube potatoes and fry in vegetable oil in pan used for bacon. Add salt as they finish frying.
Preheat oven to 350°F. Spray or lightly grease 2 med. size casserole dishes. Add bacon, ham, bread, & potatoes to the two dishes (just eyeball splitting the items in two). Whisk: eggs, milk, & cheese in a bowl. Pour mixture over items in casserole dishes, no need to stir or mix.
Cook in oven 45-55 minutes or until center is done.
