Fish Croquettes

Original recipe yields 1 serving
1/2 lb potatoes, skinned and cubed
1/2 lb fresh white fish fillet, any kind will do
1 bay leaf
Salt, pepper, onion powder, dried parsley all to taste
1 egg
3-4 tablespoons corn flour
Oil for deep frying

Boil the cubed potatoes in a pan of salted water, and when almost done add the fish and the bay leaf. Boil till fish is done. Drain fish and potatoes in a colander and leave to dry out for about 15-20 minutes. Remove and discard bay leaf.

When all the water has been drained put in a bowl and mash with a fork till resembles a soft dough like mixture. When cooled season to taste with salt, pepper, onion powder, and parsley. Add the egg to the mixture when it’s cooled down and then the corn flour. Leave in the fridge for about an hour.

Then shape into croquettes of the desired shape and deep fry in hot oil. First fry one croquette and if you see it breaking up add a bit more of corn flour.
