In a large bowl, mix the milks and the water. Set aside. In a small bowl, mix the egg yolks and the cornstarch. Add the egg mix to the milk one and mix together.
In a double-boiler (water-bath**), cook until it thickens (making sure to stir constantly)****.
Let cool down completely (approximately 2-3 hours or overnight). Add nutmeg and rum to taste. Strain the mixture. Bottle and refrigerate (preferable dark color bottles).
