Peel potatoes, dice in very small pieces. Dice onion in small pieces. Wash both potatoes and onion.
In stock pot, cover potatoes, and onion with water about 1-inch above potatoes. Add salt and pepper to taste. Bring to boil. Add evaporated milk. Boil for about 30 min. Add broccoli. Boil about 20 min. After 10 min., slice smoky links about 1/8-inch thick, add to soup.
Potatoes, should be completely mashed, then add Velveeta. Once the cheese is melted, your soup is done. Best served with Dough Dobbs.
