8 chicken thighs, skin removed
3/4 cup salsa
1/2 cup peanut butter
2 Tbsp lime juice
1 Tbsp soy sauce
1 tsp grated fresh ginger
1/4 cup chopped peanuts

Put chicken in slow cooker. Mix remaining ingredients except peanuts and pour over chicken.

Cover and cook on low heat for 8 hours.

Remove chicken. Skim off fat. Pour sauce over chicken and top with chopped peanuts. Serve with rice.
