Original recipe yields 1 serving
1 medium onion
4 Tbsp butter
1 cup sliced carrots, fresh or frozen
2 large potatoes, peeled and cubed
1 can diced tomatoes, do not drain
2 cups leftover and frozen vegetables (i.e. mixed, corn, green beans)
1 cup leftover roast beef, cubed
2 quart s beef broth
2 tsp tarragon
1 Tbsp parsley
1/2 Tbsp salt
10 peppercorns or pepper to taste
1 bay leaf

Saute onion in butter until tender.

Add the rest of the ingredients and bring to a slow boil.

Turn down heat and simmer until potatoes are tender. Remove bay leaf before serving.
