Preheat oven to 425°F. Peel, core and chop apples into 1/4" pieces. In medium bowl, combine apples, sugar, flour and cinnamon. Toss gently. Set aside.
Open and unroll pie crust. Using a 4" circle cookie cutter (or bowl) cut out 5 circles. Press each circle into 5 spaces in a muffin tin. Evenly divide the apple mixture. Cut leftover dough into strips and use to top each filled muffin tin weaving the strips over the apples. Fill empty muffin 1/4 up with water.
Bake until bubbly, about 15-18 minutes. Let cool in muffin tins before removing.
