2 tsp baking powder
1 tsp cinnamon
1/2 tsp salt
3/4 cups brown sugar
4 eggs
1/4 cups olive oil
1 tsp vanilla

Preheat oven to 350 degrees F. Combine all dry ingredients. Add other ingredients except for the apple. Let stand 10 minutes to thicken.

Meanwhile, chop the apple into small pieces. Add the apple to the muffin mix. Pour into nonstick muffin pan.

Bake for 18 minutes or until toothpick inserted in the center of muffins comes out clean.
