Original recipe yields 1 serving
1 stick butter
1 small onion, diced
1/2 loaf Velveeta, cut into cubes
2 cups Kraft Shredded Sharp Cheddar Cheese
1 large can cream of mushroom soup
1 can mushrooms, drained
1 container (16 oz.) sour cream
1/2 tsp coarsely ground pepper
1 large bag frozen shredded potatoes

Set your crock-pot on medium heat. In a small frying pan on medium heat melt butter and add onions. Cook until clear. Put onions into crock-pot.

Add all ingredients accept for potatoes. Cook for one hour stirring every 20 minutes.

Add potatoes and fold them in. Turn crock-pot to low and cook for an additional couple of hours until creamy and thick. Do Not Over Stir! Great for entertaining and holidays.
