Original recipe yields 1 serving
1 can (16 oz.) black beans, drained not rinsed
1 pkg (10 oz.) frozen whole kernel corn
1 cup Minute Rice
1 jar (16 oz.) thick and chunky style salsa mild or medium to taste
1 sm. can picante style tomato-vegetable juice
1 tsp oregano
1 tsp cumin
1 pkg (8 oz.) Kraft Mexican Style Cheese (for topping)

Let's Make It

Preheat oven to 375°F. In casserole dish add drained black beans and all remaining ingredients except cheese. Stir to mix well.

Cover casserole and put into preheated oven. After 1/2 hour stir and recover. In 30 minutes remove from oven and add cheese to top. Place back into oven until cheese is melted. Let stand 5 minutes and serve.

Serve with warm tortillas or green salad and bread sticks.
