Original recipe yields 1 serving
1 turkey breast or thigh, about 1 1/2 lb,
2 cans (14 1/2 oz. each) chicken broth
1 celery top
1 medium onion, sliced
1 bay leaf
1 can (15 1/2 oz.) garbanzo beans
1 tbs p. chopped canned green chilies
1 tsp dried oregano leaves
1 cup diced Monterey Jack cheese, optional
Freshly cracked black pepper or fresh dill

1. Simmer turkey with the broth, celery, onion and bay leaf for 35 min. covered with lid, until vegetables are tender. Strain the broth. Dice the turkey meat.

2. Stir in garbanzo beans and bean liquid, chilies and oregano. Return meat to pot. Simmer, uncovered, for 5 minutes.

3. Serve in large soup bowls. Top with cheese cubes, if desired, and sprinkle with the black pepper or dill.
