Original recipe yields 1 serving
6 large eggs
2 cups milk
1/2 Tablespoon parsley
1/4 teaspoon rosemary
Salt, to taste
Pepper, to taste
4 slices bread, torn in 1-inch pieces
1 lb breakfast sausage, browned
1/4 cup onion, chopped
1/2 cup bell peppers, chopped, (optional)
4 oz to 8 oz. Colby/Jack cheese, shredded

Beat eggs, milk, parsley, rosemary, salt, and pepper together in large mixing bowl. Set aside.

Spray 9x13-inch baking pan with non-stick spray or rub with oil. Tear up bread slices and spread around bottom of 9"x13" pan. Set aside.

In skillet, brown sausage with onions and peppers, if used. Sprinkle sausage mixture over bread pieces in pan. Pour egg mixture over sausage and bread then top with cheese. Cover with foil and allow to set for at least 1 hour in the refrigerator.

Bake at 350 degrees F for 30-40 minutes, until cheese starts to brown. Allow to cool, approximately 10 - 15 minutes, and then slice into 8 servings.
